Slow Food – Novellolio: Olive Oil, Bread and Stories in Matera with Francesco

A convivial experience to discover extra virgin olive oil not just as something to taste, but as a living part of local culture. You’ll spend 4–5 hours around the table with small family olive oil producers — people who truly make this oil every year, using methods and knowledge passed down over time. Through conversation, shared dishes and guided tastings, you’ll discover how the flavor of food changes depending on the oil paired with it. Each course from the Matera culinary tradition will be matched with a different olive oil. You’ll learn to recognize aromas, intensity and characteristics directly from those who produce it. Between courses, there will also be short readings and stories, from the Odyssey to other texts where the olive tree and olive oil appear as symbols of home, peace, strength and journey. A simple way to connect what we eat with a much older story. This is a slow experience, designed to share time together, ask questions, listen and enjoy being at the table.
